From Fried Rice to Banquets — Hsinchao Restaurant’s Bold New Creation
《Hsinchao Palace》 Opens a New Chapter in Contemporary Refined Taiwanese Banquet Dining
After earning the Michelin Bib Gourmand distinction for two consecutive years, Hsinchao Restaurant has become known for its creative reinterpretation of Taiwanese cuisine — centering on innovative fried rice while infusing traditional flavors with contemporary ideas.
Now, with Hsinchao Palace, the brand takes a bold leap forward — presenting a new concept of modern round-table banquets. The space integrates multiple private dining rooms with open seating areas, creating a diverse environment that balances intimacy and casual social gatherings. Retaining the warmth and abundance of traditional southern Taiwanese banquets, the restaurant also offers a curated selection of over a hundred fine wines, transforming every meal into a lavish feast that bridges the ordinary and the extraordinary.
Integrating Tradition into Space - A New Taiwanese Banquet Experience
The circle — a symbol deeply rooted in Taiwanese culture — represents reunion and continuity. This concept extends into the interior design through curved lines, cylindrical columns, arches, and circular windows that flow together like drifting clouds. The interplay of materials such as metal, mirrors, serpentine stone, and wisteria wood adds creative contrast and texture.
Hsinchao Palace features multiple private rooms accommodating 10 to 24 guests, each with its own distinctive ambiance. The walls are adorned with commissioned works by three international illustration artists, who reimagine traditional Chinese landscape motifs into surreal dreamscapes that invite guests into realms of imagination.
Outdoors, a mist-shrouded secret garden has been created among the city’s high-rises, offering a breathtaking view of Taipei 101. From the bright daylight to the glow of sunset and the shimmer of city lights at night, guests can experience a full panorama of changing moods and scenery.
Collaborating Once Again with International Design Experts for a New Interactive Visual Experience
The dynamic visual design is crafted by Bito, an award-winning international creative studio. At the entrance, dual circular screens display flowing, ethereal imagery that welcomes guests with an artistic flourish. Above the bar, an interactive visual installation uses image recognition technology to respond to guests’ movements and gestures. The visuals break the boundaries of the screen, blending seamlessly into the architecture — flickering like candlelight or the fleeting shadow of mythical creatures — infusing the space with a dreamlike vitality and elegance that elevates the overall experience.
From Mountains and Seas to the Table — A New Interpretation of Banquet Cuisine
Hsinchao Palace’s menu highlights seasonal Taiwanese ingredients and creative reinterpretations. Freshness is paramount for seafood, precision for meats, and seasonality for vegetables. From appetizers and meats to main courses and soups, every dish combines the exuberant generosity of southern Taiwanese banquets with modern refinement and balance.
Signature dishes include:
- Green Garlic Apple Mullet Roe — a creative twist on the classic mullet roe pairing, combining creamy apple purée with a five-step green garlic sauce that harmonizes savory richness with fruity freshness.
- Garlic Pork Cucumber Roll — inspired by the traditional “Garlic Pork Slices,” this dish uses locally raised, toxin-free pork belly finely sliced and rolled with crisp cucumbers, topped with house-made garlic sauce for a contemporary take on a beloved flavor.
- Lobster Crystal Toast — reinterpreting the traditional “no lobster, no banquet” spirit, this refined square toast encloses fresh lobster and handcrafted squid mousse, deep-fried to a golden crisp, then finished with lobster bisque and basil pesto for a rich, oceanic indulgence.
In the open dining area, à la carte dishes extend the brand’s signature flavors, from Shrimp & Pumpkin Rice Vermicelli and Stir-Fried Cuttlefish Tagliatelle to the Hsinchao Trio Beef Noodles. Guests can also enjoy refined reinterpretations of classics such as Crispy Salted Egg Squid, Snail & Century Egg Salad, and Red Fermented Pork with Greens — everyday dishes elevated through creative craftsmanship.
A Journey Through Flavors — 100 Wines and Signature Cocktails
The elegant Wine Bar houses over a hundred curated wines from around the world, each bottle reflecting its terroir and the passion of its winemakers. Whether as a brief pause amid a busy day, a leisurely afternoon, or a gathering with close friends, guests are invited to raise a glass and savor the moment.
Above the bar, another sensory experience awaits — six signature cocktails that blend classic mixology with Taiwanese ingredients to create new flavor dimensions.
- “Jade Dew Mountain God” builds on the Gin Fizz, incorporating Lishan Oolong tea soda for delicate floral notes and a long, elegant finish.
- “Red-Feathered Crane”, inspired by the Paper Plane, infuses Neipu chocolate from Pingtung, creating a deep interplay of richness and bittersweet complexity.
From the generosity and warmth of traditional Taiwanese banquets to a contemporary setting reimagined for a new generation, Hsinchao Palace redraws the boundaries of Taiwanese dining — inviting you to raise a glass and savor every bite in a feast of beauty, surprise, and imagination.
